Our oysters are responsibly sourced by War Shore Oyster Co. War Shore works with premier oyster farms up and down the East and West coasts to ensure our product is sustainable & fresh from the water to your plate. 

Current Varietals:
Cannon Cove - full bodied, Chesapeake oysters with a moderate salinity of 16-18 PPT. James River, VA

Bella de Jur - larger, deep cupped oysters from the deeper, colder waters of Nova Scotia, Canada.
